Colonnata is a tiny place. It is one of those hill towns that is squeezed onto the ledges up a narrow valley cut in the marble mountains. All of the lardo makers are inside the village limits. Be sure to walk down every alley, stairway and walkway before picking your favorite place for lardo. I selected Larderia Il Poggio, which is at the end of the town. For lunch, I ate at Trattoria Locanda Apuana, Via Communale 1, just down the hill from the main square. See my new post on lardo.</description>
